I’m not here to endorse Chowking Food restaurant but I’m here to share how to cook my favorite breakfast meal whenever I go and eat there, the Yang Chow Fried rice. Yang Chow fried rice is a popular chinese-style fried rice dish in many Chinese restaurants like Chowking. Chinese foods are good or I say the best for me. When in comes to Pancit and fried chicken, I prefer their style because it simply satiates my appetite without getting “dizzy” after I ate more than of my normal plate serving. So how did I end up with this recipe?
I say it’s not my original recipe but after so many times of observing my favorite meal’s ingredients while eating it, reading some online procedures of preparing it and trying to replicate it so many times, I was able to come up with my own style that I can say taste close to its original Chowking flavor.
So here is my list of ingredients and procedure good for 4 servings.
Ingredients Needed :

2 tablespoons soy sauce

1-1/2 teaspoons sesame oil

1/8 teaspoon white pepper

3 tablespoons cooking oil

2 eggs lightly beaten
-
1 slice bacon diced
-
1/4 onion chopped
-
3 cups cooked rice
-
2 oz small cooked shrimp diced (or half-sliced at the back)

1 cup lettuce shredded (kangkong can be alternative)

3 tablespoons frozen peas and carrots thawed (corn is optional)

1-2 tablespoons water or chicken broth
- a bunch of scallion (onion leaves)
- 1 tablespoon of minced garlic
Preparing the Rice:
The rice to be used can be a leftover or freshly cooked rice. For leftover, just place it in the fridge overnight and let it cool down to room temperature the next morning for frying. Gently break the lumps with the clean hands to separate the grains. Then for freshly cooked rice, just cook it a little drier to avoid it from getting sticky to the frying pan once fried. To do this, wash the rice diligently until the water turns clear. This removes most of the starch from the rice that makes it sticky. After the rice is cooked, remove it from its cooking container and spread it thinly to a wide-open tray to remove excess steam or heat.
Cooking Procedures:

Combine the soy sauce, sesame oil and white pepper in a bowl.

Place the pan over medium heat until it gets hot. Add 1/2 tablespoon oil, swirling to coat the sides. Add the eggs and cook while stirring and try to break it into smaller pieces. Remove the egg from pan.

Place the frying pan over low heat. Saute the garlic to remaining 2-1/2 tablespoons cooking oil until it turns golden brown. Remove immediately once golden brown using mesh strainer.

Then Pan-fry the shrimps briefly. Once it turns slightly golden, remove and keep aside.

Add the bacon and onion to the frying pan; stir-fry for 1 minute. Add the rice, shrimp, lettuce and peas and carrots; stir-fry for 2-1/2 minutes. If the mixture appears dry, add a tablespoon or two of water or chicken broth. Add the soy sauce, sesame oil and white pepper mixture and mix well. Add the cooked egg and cook until heated through.

Sprinkle the garlic and scallion to pan and mix.
- Then remove from pan and serve.

Hi Fifth! This recipe is just inspired by chowking yangchow fried rice and not actually its original recipe. I doubt if we will ever find one as recipes of famous restaurants are always kept secret for the sake of their business. Anyway, you can try to follow this recipe of mine and find out if it taste close to chowking's. Thank you!
